Ingredients:

2 cups heavy cream

10 large eggs

1 cup granulated sugar

4 oz unsweetened chocolate, broken into 1/2 ounce pieces

20 oz semisweetened chocolate, broken into 1/2 ounce pieces

4 cups semisweet chocolate chips

1 tsp baking soda

2 tsp coconut extract

1 1/2 cups cake flour

Instructions:

Preheat oven to 325.

Warm 2 inches of water over medium in the bottom portion of a double boiler and put the 20 oz semisweet chocolate, 4 oz of unsweetened chocolate and 2 cups of heavy cream into the top portion (Tip: warm the water in the bottom portion of the boiler before putting the chocolate on the top).  Cover with pastic wrap and let it warm for 8 minutes.  Remove hte boiler from the heat and mix until smooth.

Mix together the coconut extract, sugar and eggs in a mixing bowl and beat for about 4 minutes at medium power.  Then add the mixture from the boiler and stir for 20 seconds at medium power. 

Add the baking soda, chocolate chips and cake flour to the mixture and stir on low power for about 10 seconds.  Slowly increase to medium power for another 10 seconds or until it is thoroughly mixed.

Pour the mixture into cupcake baking cups (should make 36 cupcakes).  Allow some room from the top because the cupcakes will rise.

Bake in oven for approximately 25 minutes, or until a toothpick placed in the center of the cupcake comes out clean.
